  • 1/4 cup Butter Substitute with olive oil for a dairy-free version.
  • 1/4 cup Honey Maple syrup can be used for a vegan alternative.
  • 1 teaspoon Dried Rosemary Fresh rosemary can be substituted for more intense flavor.
  • 1 teaspoon Garlic Powder Can be swapped with fresh minced garlic.
  • 1 teaspoon Kosher Salt Sea salt can be used as a substitute.
  • 1/2 teaspoon Freshly Ground Black Pepper

For the Carrots

  • 2 lbs Carrots Rainbow carrots can be used for visual appeal.
  • 1 tablespoon Fresh Thyme Optional garnish; parsley can be used instead.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Melt the butter in a saucepan over low heat.
  • Stir in honey, dried rosemary, garlic powder, salt, and pepper until well combined.
  • Prepare the carrots by peeling and halving them lengthwise.
  • Place the carrots on a large baking sheet, evenly spread.
  • Drizzle the honey-butter glaze over the carrots, using tongs to coat them.
  • Roast the carrots in the oven for 35-40 minutes, until caramelized and tender.
  • Optionally garnish with fresh thyme before serving.

Notes

Best enjoyed fresh; can be stored in the refrigerator for up to 3 days. Freezing recommended for up to 3 months. Add crushed nuts for extra crunch if desired.
