Ingredients
  

For the Chicken

Preparation Steps

  • Preheat your oven to 400°F (200°C) and line two rimmed baking sheets with parchment paper.
  • Peel and chop the sweet potatoes into bite-sized pieces, then spread them out evenly on one of the sheet pans.
  • Pat the boneless skinless chicken thighs dry with a paper towel to encourage browning, and place them on the second sheet pan.
  • Chop the bacon into small pieces and scatter it over the chicken thighs.
  • Chop the broccoli into florets and place it in a bowl.
  • Generously drizzle olive oil over both sheet pans and toss to coat all the ingredients evenly.
  • In a small bowl, combine salt, black pepper, smoked paprika, garlic powder, onion powder, and brown sugar. Sprinkle this mix over the chicken and sweet potatoes.
  • Place the sheet pans in the preheated oven. Bake the sweet potatoes and chicken for 20 minutes.
  • After 20 minutes, carefully toss the sweet potatoes for even cooking and add the broccoli florets to the chicken pan. Bake everything together for another 20 minutes.
  • Once cooked, assemble the bowls, layering the roasted ingredients and generously drizzling with hot honey.

Notes

Garnish with fresh chopped parsley if desired. Store leftovers in airtight containers for up to 3 days, or freeze for longer storage.
