  • 2 cups small pasta (fusilli or penne) use any small shape
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup fresh bell peppers or cucumbers diced
  • 1 cup cheddar cheese can substitute with mozzarella or omit for vegan option

For the Dressing

  • 1/4 cup olive oil can replace with any mild oil
  • 2 tablespoons honey can replace with maple syrup
  • 1 tablespoon mustard mild Dijon or yellow mustard works
  • 1 teaspoon dried herbs Italian seasoning or mixed herbs

  • Bring a large pot of salted water to a boil and cook the pasta until al dente, about 8-10 minutes. Drain and rinse under cold water to cool it down.
  • In a large bowl, combine the cooked pasta with your choice of frozen vegetables, such as peas, carrots, and corn, along with fresh vegetables like diced bell peppers or cucumbers.
  • In a separate small bowl, whisk together olive oil, honey, mustard, and dried herbs until well combined and glossy.
  • Pour the dressing over the pasta and vegetable mixture. Gently toss everything together until the pasta is well-coated and colorful.
  • You can serve the salad immediately, or cover and chill it in the refrigerator for up to 30 minutes for the flavors to meld beautifully.

Notes
