Ingredients
  

For the Meat Mixture

  • 2 pounds ground meat pork, beef, or turkey
  • 1 large onion finely chopped
  • 4 cloves garlic minced
  • 3 leaves bay chopped
  • 1 tablespoon yellow mustard seeds

For Seasoning

  • 2 teaspoons salt
  • 1 teaspoon ground pepper

For the Casings

  • 5 feet sausage casings soaked and rinsed

How to Make Kielbasa Sausage

  • Combine the ground meat, chopped onion, minced garlic, bay leaves, yellow mustard seeds, salt, and ground pepper in a large mixing bowl. Mix until everything is evenly integrated, about 5 minutes.
  • Rinse the sausage casings by running cold water through them to remove excess salt.
  • Attach the stuffer attachment to your meat grinder, and securely fasten one end of the casing onto the stuffer.
  • Fill the grinder with the combined meat mixture. Carefully push the mixture into the casing while holding it taut to avoid air pockets.
  • Tie the open end of the filled casing in a knot. Twist the casing at intervals if creating links.
  • Preheat your oven to 350°F. Place the sausages on a baking tray and poke a few small holes with a toothpick.
  • Bake the sausages for about 30 minutes, or until they are golden brown and cooked through.

Notes

Serve with mustard or sauerkraut for an extra zing. Store in an airtight container for up to 3 days in the fridge or wrap tightly for up to 3 months in the freezer.
