Preparation

  • Preheat oven to 350°F (175°C).
  • In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  • In a separate large bowl, cream the softened butter until light and fluffy. Add the eggs, one at a time, mixing well after each addition.
  • Incorporate the lemon zest and then add the milk, stirring until well combined.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • Pour the batter into a greased loaf pan and smooth the top. Bake for about 50-60 minutes, or until a toothpick comes out clean.
