Cookie Dough

  • 1 cup Unsalted Butter At room temperature.
  • 3 cups All-Purpose Flour Do not overwork the dough.

Making Maamoul Cookies

  • Prepare Filling: Pulse pecan halves in a food processor until roughly chopped. Set aside.
  • Blend Dates: Combine pitted dates, granulated sugar, coconut oil, and cinnamon in the food processor. Blend until smooth, then mix in chopped nuts.
  • Make Dough: Beat unsalted butter and granulated sugar until fluffy. Add egg, then gradually mix in all-purpose flour until a soft dough forms.
  • Shape Cookies: Roll dough into small balls, press into molds, fill with date-nut mixture, and seal. Dust molds with confectioners' sugar.
  • Bake: Bake cookies on a lined sheet at 325°F for 19-21 minutes until lightly browned.
  • Cool & Dust: Allow cookies to cool on a wire rack, then dust with confectioners' sugar.
