For the Stir Fry

  • 2 tablespoons Olive oil For sautéing
  • 1 lb Chicken thighs or breasts Skinless, boneless
  • 0.5 teaspoon Smoked paprika
  • 0.5 teaspoon Dried oregano
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

For the Vegetables

  • 10 oz Fresh spinach
  • 4 cloves Garlic Minced
  • 4 oz Cherry tomatoes Halved

For the Topping

  • 6 oz Feta cheese Crumbled
  • 2 tablespoons Freshly squeezed lemon juice

  • Heat the oil: In a large, high-sided skillet, heat 2 tablespoons of olive oil over medium heat.
  • Prepare the chicken: Slice 1 lb of chicken into smaller segments. Season with smoked paprika, dried oregano, salt, and black pepper.
  • Cook the chicken: Add the seasoned chicken to the skillet and cook for about 10 to 15 minutes until cooked and golden brown. Remove from the skillet.
  • Sauté the veggies: In the same skillet, add spinach, minced garlic, and half of the cherry tomatoes. Cook until the spinach wilts.
  • Add the finishing touches: Stir in crumbled feta, remaining cherry tomatoes, and lemon juice. Mix until well combined.
  • Reheat the chicken: Return the cooked chicken to the skillet and gently reheat, adjusting seasoning as needed.
