  • Prepare the Peaches: Place the diced peaches in a large bowl and add ¼ cup sugar, lemon juice, and a pinch of salt. Let them sit undisturbed for 20 minutes, then gently mash.

  • Warm the Milk: Heat the whole milk over medium-low heat until warm, then whisk into the egg-sugar mixture gradually.
  • Combine and Heat: Return to saucepan and add heavy cream, heating until it steams gently.
  • Mix in Peaches: Fold in the prepared peaches and juices, then place the saucepan in the freezer to chill for 1 hour.
  • Churn the Mixture: Pour the chilled mixture into an ice cream maker and churn until soft-serve texture, about 20-25 minutes.
  • Freeze to Firm Up: Transfer to freezer for about 2 hours until firm.
