Crust

  • ½ cup Butter room temperature
  • 2 tbsp Butter
  • ¼ cup Sugar
  • 1 ¼ cup All-purpose flour

Custard

  • ¾ cup Sugar
  • 1 large Egg
  • 2 large Egg yolks
  • ¼ cup All-purpose flour
  • ¼ teaspoon Salt
  • 3 cups Rhubarb chopped into 1-inch pieces

Preparation

  • Preheat the Oven: Begin by setting your oven to 350ºF (180ºC). Line an 8 or 9-inch square baking dish with parchment paper.
  • Cream the Butter and Sugar: Beat together the butter and ¼ cup sugar until light and fluffy, about 1 to 2 minutes.
  • Add Flour and Salt: Incorporate 1 ¼ cups of all-purpose flour and ¼ teaspoon salt into the mixture. Mix on low speed until crumbly.
  • Form the Crust: Spread and press the crumbly dough evenly into the pan to create a packed shortbread layer.
  • Bake the Crust: Bake in the preheated oven for 24 to 26 minutes or until the edges are golden. Let it cool.
  • Prepare the Custard Mixture: Mix ¾ cup sugar, 1 large egg, and 2 egg yolks until smooth.
  • Incorporate Flour and Salt: Add ¼ cup flour and ¼ teaspoon salt into the custard mixture, mixing until blended.
  • Fold in the Rhubarb: Gently add the chopped rhubarb and fold it into the custard mixture.
  • Pour and Spread: Pour the custard mixture over the pre-baked crust and spread evenly.
  • Bake It All Together: Bake for 42 to 45 minutes, or until set. Let it cool completely on a wire rack before slicing.
