Preparation

  • Preheat the oven to 375°F (190°C) and grease the baking dish with melted butter.
  • Whisk together granulated sugar and cornstarch in a bowl, then add rhubarb and lemon juice and toss to coat.
  • Combine oats, flour, brown sugar, salt, and optional cinnamon; drizzle melted butter and stir until moistened but chunky.
  • Spread the oat mixture over the rhubarb filling, allowing some clumps for added texture.
  • Bake for 35 to 45 minutes until juices are bubbly and topping is golden brown. Cool for at least 15 minutes before serving.

Notes

Serve warm with vanilla ice cream for the ultimate treat. Store leftovers in an airtight container for up to 5 days. Freeze for up to 3 months.
