How to Make Slow Cooker Sweet Potato Chili

  • Begin by peeling and cutting sweet potatoes into 1-inch chunks. Dice the onion and bell pepper, and mince the garlic. Drain and rinse the black beans.
  • In a small bowl, combine cumin, chili powder, paprika, oregano, cayenne pepper, and salt.
  • In your slow cooker, add diced onion and green bell pepper first. Then layer in sweet potato chunks, minced garlic, the spice blend, black beans, diced tomatoes, and pour in chicken broth. Stir to combine.
