Ingredients
  

For the Filling

  • 1 cup vermicelli rice noodles cooked according to package instructions
  • 12 pieces large cooked shrimp sliced crosswise
  • 8 pieces spring roll wrappers
  • 1 cup shredded carrots
  • 8 leaves butter lettuce for wrapping
  • 1 cup Persian cucumbers cut into matchsticks
  • 1 cup fresh herb leaves cilantro, mint, or basil

For the Peanut Sauce

  • 2 tablespoons brown sugar
  • 2 tablespoons hot water
  • 1/2 cup unsweetened creamy peanut butter
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon seasoned rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon chili garlic sauce
  • 1/2 teaspoon ground ginger
  • to taste sea salt

For the Sweet Chili Sauce

  • 1 cup granulated sugar
  • 1/2 cup hot water
  • 1 clove garlic clove grated, optional
  • 1 tablespoon fish sauce
  • 1 tablespoon fresh lime juice

Instructions
 

How to Make Spring Rolls

  • Bring a large pot of water to a boil. Cook the vermicelli rice noodles according to package instructions for 3-5 minutes. Drain and rinse with cool water.
  • Slice each shrimp crosswise to create butterfly shapes.
  • Dip one spring roll wrapper into warm water and let soften for 8-10 seconds. Dampen your work surface and lay the wrapper flat.
  • Place half a lettuce leaf at the edge of the wrapper. Top with noodles, shredded carrots, cucumber, and fresh herbs. Add 3 shrimp halves on top.
  • Starting from the edge closest to you, roll tightly. Fold in the sides and continue rolling until fully wrapped. Repeat.
  • In a bowl, combine brown sugar and hot water. Once dissolved, whisk in peanut butter, soy sauce, vinegar, sesame oil, chili garlic sauce, and ginger until smooth.
  • In another bowl, combine granulated sugar and hot water until dissolved. Add garlic, fish sauce, lime juice, and chili garlic sauce.
  • Serve spring rolls with dipping sauces on the side.

Notes

Garnish with chopped peanuts on top for extra crunch. Fresh spring rolls are best enjoyed the same day they're made.
