Ingredients
  

For the Cookie Crust

For the Cream Cheese Frosting

For the Strawberry Glaze

  • 1 pound fresh strawberries Look for ripe, juicy strawberries for the best taste.

  • 3 ounces strawberry gelatin Provides a vibrant color and flavor to the glaze.
  • ¼ cup cornstarch Thicken the glaze for a perfect drizzle over your pizza.

Preparation

  • Preheat your oven to 350°F. Line a 10 x 15 inch baking sheet with parchment paper or lightly spray it with cooking oil to prevent sticking.
  • Spread the sugar cookie dough evenly in the prepared pan using oiled hands. Bake for 17-18 minutes until the edges turn a light golden brown. Allow the cookie crust to cool on the pan for about 15 minutes.
  • Cream together the cream cheese and butter in a mixing bowl until smooth. Gradually add 1 cup of powdered sugar and the vanilla, mixing thoroughly. Add the remaining cup of powdered sugar and blend until completely smooth.
  • Frost the chilled cookie crust with your cream cheese mixture, spreading it evenly across the top once the crust is cool to the touch.
  • Dice 4 medium strawberries and mash them in a large bowl to release their juices. Set these aside. Slice the remaining strawberries into ¼ inch thick slices for the topping.
  • Combine the gelatin, water, sugar, cornstarch, and mashed strawberries in a medium saucepan over medium heat. Cook while stirring continuously for about 5 minutes until a thick glaze forms. Remove from heat and allow to cool for about 15 minutes.
  • Layer a thin coat of strawberry glaze over the cream cheese frosting on the cookie crust. Arrange the sliced strawberries on top, then drizzle any leftover glaze over the entire arrangement.
  • Chill the pan in the fridge for 20 minutes until the glaze fully sets. Slice and enjoy every delicious bite!
