  • Chop the toasted pecans after transferring them to a cutting board.
  • Soak the sliced red onion in a bowl covered with cold water.
  • Whisk together the poppyseed dressing in a mixing bowl or measuring cup.
  • Assemble the salad in a large serving bowl, starting with the fresh baby spinach and topping with the quartered strawberries.
  • Drain the red onion and add it to the salad. Drizzle half of the dressing over the top and gently toss.
  • Add the crumbled feta cheese and toasted pecans to the salad, and toss lightly to combine.
  • Serve immediately with extra dressing on the side if desired.

Notes
