For the Chili Base

  • 2 lb Ground Beef (85/15 blend) can be swapped for ground turkey
  • 2 tbsp Avocado Oil can be replaced with canola oil
  • 1 large Yellow Onion diced into 1/2-inch pieces
  • 1 Green Bell Pepper diced into 1/2-inch pieces
  • 30 oz Kidney Beans drained and rinsed
  • 30 oz Tomato Sauce
  • 1/2 cup Chicken Bone Broth substitute with vegetable broth

For the Seasoning

  • 1 tsp Black Pepper
  • 2 tsp Sea Salt adjust to taste
  • 1.5 tsp Paprika
  • 1 tbsp Ground Cumin
  • 2 tbsp Chili Powder adjust for mild flavor
  • 1 tbsp Dried Oregano
  • 1 Bay Leaf remove before serving

How to Make Tasty Kid-Friendly Beef Chili

  • Prep Vegetables: Start by dicing your yellow onion and green bell pepper into ½-inch pieces. Drain and rinse the kidney beans under cold water to ensure they're ready to mix in.
  • Sauté Onions & Peppers: Heat a large pot over medium heat and add 2 tbsp of avocado oil. Once hot, toss in the diced onion and bell pepper, cooking for 3-4 minutes until softened and fragrant.
  • Brown the Meat: Increase the heat to medium-high and add the 2 lbs of ground beef. Break it apart as it cooks, stirring for about 3 minutes until it's nicely browned.
  • Add Spices: Stir in 1 tsp of black pepper, 1.5 tsp of paprika, 2 tsp of sea salt, 1 tbsp of ground cumin, 2 tbsp of chili powder, 1 tbsp of dried oregano, and 1 bay leaf. Cook for another 2-3 minutes, allowing the spices to toast and develop their flavors.
  • Incorporate Liquids: Pour in 30 oz of tomato sauce and ½ cup of chicken bone broth. Use a wooden spoon to scrape up any browned bits stuck to the bottom, mixing them into the sauce.
  • Add Beans: Add the 30 oz of drained kidney beans to the pot and bring the mixture to a boil. Then reduce the heat and let it simmer uncovered for 15-20 minutes, stirring occasionally.
  • Finalize: Remove the bay leaf, taste your chili, and adjust seasoning if needed. Serve the chili hot to enjoy its comforting goodness!
