Ingredients
  

For the Meatballs

  • 1 lb Ground Turkey or ground beef
  • 1 tsp Onion Powder freshly ground is better
  • 1 tsp Garlic Powder
  • 1 medium Yellow Onion diced into 1/2-inch pieces

For the Chili

  • 1 cup Mushrooms sliced thin
  • 2 tbsp Chili Powder adjust to taste
  • 1 tbsp Ground Cumin
  • 28 oz Diced Tomatoes high-quality San Marzano recommended
  • 8 oz Tomato Sauce
  • 15 oz Black Beans drained and rinsed
  • 1 cup Frozen Corn add directly from freezer
  • to taste Salt
  • to taste Black Pepper

Instructions
 

Preparation

  • In a medium bowl, combine ground turkey with garlic and onion powders, salt, and black pepper. Mix gently and shape into 20-24 walnut-sized meatballs.
  • While shaping the meatballs, dice the yellow onion and slice the mushrooms for even cooking.
  • In a small bowl, mix the remaining garlic and onion powders with chili powder and cumin for flavor.
  • Place the meatballs in the crockpot. Pour the diced tomatoes and tomato sauce over them, then add the onions, mushrooms, black beans, and frozen corn.
  • Evenly sprinkle the spice mixture over the ingredients in the crockpot, stirring gently to keep meatballs intact.
  • Cover the crockpot and cook on high for 2-3 hours or on low for 3-4 hours until meatballs are fully cooked.
  • Before serving, taste and adjust seasoning with salt and pepper as needed.

Notes

Optional: Serve with sour cream or cheese for added creaminess.
