Ingredients
  

For the Chicken

  • 1 lb Chicken Breasts juicy and tender when baked
  • 2 large Eggs used to bind the panko breadcrumbs
  • 1 cup Panko Breadcrumbs creates a delightful crunch

For the Sauce

  • 1/4 cup Honey adds sweetness and stickiness
  • 1/4 cup Brown Sugar enhances sweetness
  • 2 tbsp Balsamic Vinegar provides acidity and depth
  • 2 tbsp Hoisin Sauce optional
  • 2 tbsp Soy Sauce contributes saltiness
  • 3 cloves Garlic fresh minced is preferred
  • 1 tbsp Fresh Ginger infuses warmth and spice
  • 1 tbsp Sriracha adds heat, adjust to taste

For the Rice

  • 1 cup Water essential for cooking the rice
  • 1 cup Instant White Rice quick-cooking base

For Garnishing

  • 2 tbsp Scallions adds color and brightness
  • 1 tbsp Sesame Seeds toasted for a nutty flavor

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Prepare the chicken by rinsing and patting it dry, then cut it into bite-sized pieces.
  • Beat the eggs in a bowl until smooth. In a separate bowl, pour in the panko breadcrumbs.
  • Coat each chicken piece in the egg mixture, then dredge it in the panko breadcrumbs, pressing gently to adhere.
  • Arrange the coated chicken on the baking sheet in a single layer. Bake for 15-20 minutes until golden brown.
  • Mix the sauce: In a saucepan, whisk together honey, brown sugar, soy sauce, balsamic vinegar, garlic, ginger, and sriracha.
  • Toast the sesame seeds in a small pan over medium heat for about 2-3 minutes until fragrant.
  • Prepare the rice by boiling water and adding instant rice. Let it sit covered for 5 minutes.
  • Combine the baked chicken with the sticky sauce, tossing to coat each piece.
  • Serve the rice in bowls, top with the sticky chicken, and sprinkle with scallions and toasted sesame seeds.

Notes

Optional: Add an extra drizzle of sriracha for more heat!
