How to Make Easy Kid-Friendly Potato Soup

  • Cut the bacon into small pieces and sauté in a large pot over medium heat until crispy, about 8-10 minutes. Remove the bacon and leave the rendered fat in the pot for added flavor.
  • Add the diced celery and onion to the bacon fat in the pot. Cook until softened, around 5 minutes. Stir in the minced garlic, cooking until fragrant, about 1-2 minutes more.
  • Gently stir in the cubed potatoes and return the crispy bacon back to the pot, mixing everything well together.
  • Pour in enough chicken stock to cover the potatoes completely. Bring the mixture to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
  • In a separate pan, melt the butter over medium heat. Whisk in the flour to create a roux, cooking for 1-2 minutes. Gradually add the cream while whisking, then season with tarragon, cilantro, and nutmeg. Continue cooking until thickened, around 4-5 minutes.
  • Slowly introduce the cream mixture into the potato pot. Using an immersion blender, blend the soup partially to create a creamy texture with some delicious potato chunks still visible.
  • Taste the soup and adjust the seasoning with salt and pepper. Serve hot, garnished as you prefer.
