  • 275 grams Water warm water activates the yeast

Instructions
 

Steps to Make Bread

  • In a large bowl, combine the sourdough discard, warm water, and instant yeast. Stir until bubbly.
  • Add the salt and bread flour to the mixture. Stir until a shaggy dough forms.
  • Cover the bowl and let the dough rest for 15 minutes.
  • Perform the first set of stretch and folds, then let it rest for 15 minutes.
  • Uncover and perform another set of stretch and folds. Rest again for 15 minutes.
  • Do a final set of stretch and folds and let the dough rest.
  • Let the dough bulk ferment for 30 minutes to an hour until it doubles.
  • Shape the dough into a round ball and place it on parchment paper.
  • Preheat your Dutch oven in the oven at 500ºF.
  • Score the dough with two slashes on top.
  • Place the dough and parchment in the Dutch oven, reduce heat to 450ºF, and bake for 25 minutes.
  • After 25 minutes, remove the lid and bake for an additional 20 minutes.
  • Let the bread cool before slicing.

Notes

Optional: Add your favorite seeds on top before baking for extra crunch.
