Ingredients
  

For the Roasted Strawberries

  • 2 cups strawberries hulled and sliced
  • 2 tablespoons sugar
  • 1 teaspoon vanilla

For the Ricotta Spread

  • 1 cup ricotta cheese room temperature
  • 2 tablespoons honey

For the Toasted Bread

  • 1 loaf sliced ciabatta or baguette/sourdough

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Toss hulled and sliced strawberries with sugar, vanilla, and a pinch of salt in a bowl. Spread them evenly on a baking sheet.
  • Roast the strawberries for 20 minutes, stirring halfway through.
  • Combine ricotta, honey, and a teaspoon of vanilla in a bowl. Mix until smooth.
  • Toast the bread slices in the oven or on a grill until golden brown.
  • Spread the ricotta mixture on the toasted bread, then top with the warm roasted strawberries. Drizzle with additional honey.

Notes

For a more elegant finish, optionally garnish with fresh mint leaves.
