  • 1 large Egg

For the Jam Filling

  • 1/2 cup Strawberry Jam Thicker option preferred
  • Alternative Fruit Jams Use raspberry or mixed berry

How to Make Easy Valentine’s Day Cookies

  • In a large bowl, whisk together flour, baking powder, salt, cinnamon, and confectioners' sugar. In another bowl, cream the softened butter and granulated sugar until fluffy, then blend in vanilla and egg. Gently fold in the dry mixture until just combined.
  • Divide the dough into two even pieces, form each into a disk, wrap in plastic, and refrigerate for at least 2 hours.
  • Preheat your oven to 375°F. On a floured surface, roll out the dough to 1/8-inch thickness between sheets of parchment paper. Use cookie cutters to create fun shapes and chill on the baking sheet for 5 minutes.
  • Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the edges are set and lightly golden.
  • After baking, let the cookies cool for about 2 minutes on the sheet, then transfer to a wire rack. Warm your chosen jam gently on low heat and spread onto the cooled cookies.
  • Place another cookie shape atop the jam and dust with confectioners' sugar before serving.

Notes

Consider drizzling melted chocolate over the top for an extra sweet touch. Store cookies in an airtight container at room temperature for up to 5 days.
