Ingredients
  

For the Dough

  • 2 cups whole milk scalded and cooled to lukewarm
  • 1 tablespoon sugar can be substituted with honey
  • 1/4 cup vegetable oil can be replaced with melted butter
  • 8 cups all-purpose flour note that some flour will be used for dusting
  • 2 packets active dry yeast ensure it's fresh for optimal results
  • 1 teaspoon baking powder for additional lift
  • 1 teaspoon baking soda enhances browning
  • 2 teaspoons salt to taste

For Baking

  • 2 tablespoons butter optional, for brushing

Instructions
 

Making the Rolls

  • In a large pot, whisk together milk, sugar, and vegetable oil. Heat until scalding but not boiling, then let it cool to lukewarm.
  • Stir in 4 cups of flour and 2 packets of active dry yeast until well combined.
  • Gradually mix in an additional 4 cups of flour, cover the dough, and let it rise in a warm place for 1 hour.
  • Fold in 1 cup of flour, baking powder, baking soda, and salt. Mix until just combined.
  • Shape walnut-sized balls of dough, placing 3 in each greased muffin tin. Cover and let rise for 2-3 hours.
  • Preheat the oven to 400°F and bake the rolls for 20 minutes until golden brown.
  • Optionally brush with melted butter before baking for flavor and shine.

Notes

These rolls can be prepared in advance and refrigerated for up to two days before baking. Serve them warm for the best experience.
