  • 1 tbsp Lemon Juice fresh
  • 2 cups All-Purpose Flour
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • 1 tsp Ground Cinnamon
  • 1/2 cup Unsalted Butter softened
  • 3/4 cup White Sugar
  • 3/4 cup Light Brown Sugar packed
  • 2 large Eggs beaten
  • 1 tsp Vanilla Extract
  • 1/2 cup Buttermilk
  • 2 tbsp Melted Butter optional

Main Steps

  • Preheat the oven to 325°F (165°C) and grease a loaf pan.
  • Mash the ripe bananas in a medium bowl until creamy, then mix in the lemon juice.
  • Whisk together the flour, baking soda, baking powder, cinnamon, and salt in another bowl.
  • Cream the softened unsalted butter and both sugars in a large mixing bowl using an electric mixer until light and fluffy.
  • Add the eggs one at a time, incorporating fully after each addition. Then, fold in the mashed bananas, vanilla extract, and buttermilk gently until combined.
  • Gently combine the dry ingredients with the wet mixture. Stir just until incorporated; do not overmix.
  • Pour the batter into the prepared loaf pan and bake for 1 hour and 10 minutes.
  • Brush with melted butter (if desired) right after baking.
  • Cool for 5-10 minutes in the pan before transferring to a cooling rack.
