How to Make Greek Chicken Bowls

  • In a bowl, whisk together olive oil, minced garlic, lemon juice, and salt. Add chicken breasts to the marinade, ensuring they are evenly coated, and let them marinate for at least 30 minutes to absorb the flavors.
  • In another bowl, mix Greek yogurt, grated cucumber, minced garlic, and lemon juice. Stir until well combined, then let it sit for a few minutes to allow the flavors to meld together beautifully.
  • Prepare your choice of rice or quinoa according to package instructions. Aim for fluffy grains that will serve as the perfect base for your Greek Chicken Bowls.
  • Preheat your air fryer to 380°F. Place the marinated chicken in the basket and air fry for 7 minutes on one side. Flip and continue cooking for another 3-4 minutes, or until the internal temperature reaches 165°F. Alternatively, pan-fry the chicken in oil over medium-low heat until browned.
  • On a plate or in a bowl, layer your cooked grain, sliced grilled chicken, fresh diced vegetables, and a generous dollop of tzatziki. For extra zest, drizzle with olive oil and a squeeze of lemon juice.

Notes
