Ingredients
**Main:**
- 3–4 lb chuck roast
- 3 yellow onions
thinly sliced
- 4 cups low-sodium beef broth
- 5 garlic cloves
minced
- 2 tsp dried thyme or 1 tbsp fresh
- 2 bay leaves
- 2 tbsp olive oil
- Salt & pepper
**Sauce:**
- 1 tbsp Worcestershire sauce
- 1 tbsp balsamic vinegar
Instructions
Preheat oven to 325°F.
Heat olive oil in a Dutch oven.
Season roast, sear 3–4 mins per side. Remove.
Sauté onions & garlic ~10 mins until caramelized.
Add roast back in. Pour in broth, Worcestershire, balsamic, thyme, bay leaves.
Simmer, then cover and bake for 3 hrs.
Let rest 15 mins before slicing. Serve with onions and sauce.
Notes
- Add 1 cup red wine for more depth
- Works great in a slow cooker too
- Freeze leftovers in airtight containers
