Ingredients
  

  • **Main:**
  • - 3–4 lb chuck roast
  • - 3 yellow onions thinly sliced
  • - 4 cups low-sodium beef broth
  • - 5 garlic cloves minced
  • - 2 tsp dried thyme or 1 tbsp fresh
  • - 2 bay leaves
  • - 2 tbsp olive oil
  • - Salt & pepper
  • **Sauce:**
  • - 1 tbsp Worcestershire sauce
  • - 1 tbsp balsamic vinegar

Instructions
 

  • Preheat oven to 325°F.
  • Heat olive oil in a Dutch oven.
  • Season roast, sear 3–4 mins per side. Remove.
  • Sauté onions & garlic ~10 mins until caramelized.
  • Add roast back in. Pour in broth, Worcestershire, balsamic, thyme, bay leaves.
  • Simmer, then cover and bake for 3 hrs.
  • Let rest 15 mins before slicing. Serve with onions and sauce.

Notes

- Add 1 cup red wine for more depth
- Works great in a slow cooker too
- Freeze leftovers in airtight containers
