How to Make Garlic Shrimp Pasta

  • Bring a medium-sized saucepan of salted water to a boil. Add the linguine pasta and cook until al dente, following package instructions, about 8-10 minutes. Reserve 1 cup of the starchy pasta water, then drain the pasta.
  • In a skillet over medium heat, melt 1 tablespoon of butter and add olive oil. Cook the shrimp for about a minute, then sprinkle with salt, pepper, and Old Bay seasoning.
  • Continue cooking the shrimp until they turn pink and opaque, which should take about 2-3 minutes. Remove the cooked shrimp and place them on a plate to keep warm.
  • In the same skillet, melt the remaining butter and add minced garlic. Cook for 30 seconds until fragrant, stirring continuously to prevent burning.
  • Pour in the heavy cream and use a spatula to deglaze the pan, scraping up those flavorful bits.
  • Stir in the parmesan cheese until melted. Gradually loosen the sauce with the reserved pasta water, allowing it to simmer for about a minute. Taste the sauce and adjust salt and pepper as necessary.
  • Toss the drained pasta in the sauce until well-coated. Add the shrimp back into the skillet, gently heating them through. Garnish with fresh parsley before serving.

Notes

Optional: Add a squeeze of lemon juice for an extra zing! Perfectly cooked shrimp should just turn pink and opaque. If your sauce is too thick, gradually add more reserved pasta water until creamy.
