For the Batter

  • 1 cup Cottage Cheese full-fat recommended for richer flavor
  • 2 large Eggs bring to room temperature
  • 1 teaspoon Garlic Powder adjust to taste
  • 1 teaspoon Onion Powder or fresh onion as substitution
  • 1 teaspoon Italian Seasoning or swap with oregano or basil
  • 1/2 teaspoon Black Pepper adjust to taste

For the Topping

  • 1/2 cup Asiago Cheese or substitute with mozzarella

Preparation

  • Gather your ingredients—cottage cheese, eggs, garlic powder, onion powder, Italian seasoning, and black pepper. Add them to a blender.
  • Blend on medium-high for about 60-90 seconds until it reaches a smooth, batter-like consistency.
  • Cut a piece of parchment paper to fit your air fryer basket, then lightly spray it with cooking spray.
  • Pour the blended mixture onto the parchment paper, and spread it into a thin, even layer, aiming for about 1/4 inch thick.
  • Place the parchment with the batter in the air fryer and set the temperature to 320°F. Cook for 12-15 minutes, checking at the 12-minute mark.
  • Carefully remove the flatbread, sprinkle with Asiago cheese, and return it to the air fryer for an additional 2-3 minutes until melted.
  • Let the flatbread cool on the parchment for about 5 minutes before cutting it into pieces.

Notes

Serve with marinara or hummus for extra flavor. Store in an airtight container in the fridge for up to 3 days or freeze with parchment between each piece.
