Ingredients
  

For the Batter

  • 1 cup Cottage Cheese Use full-fat for richness.
  • 3 large Eggs Room temperature works best.
  • 2 cups Almond Flour Superfine flour yields the best results.
  • 1/4 cup Coconut Flour Use sparingly to avoid dryness.
  • 2 tablespoon Psyllium Husks
  • 2 tablespoon Chia Seeds
  • 1 tablespoon Baking Powder
  • 1 teaspoon Salt
  • 1 teaspoon Garlic Powder

For the Topping

  • 1/4 cup Seeds (e.g., sunflower, sesame) Sprinkle on top before baking.

Preparation

  • Line a 9x5 inch loaf pan with parchment paper.
  • Preheat your oven to 340°F (170°C).
  • In a blender, combine cottage cheese and eggs. Blend for about 5 minutes until smooth.
  • In a separate bowl, whisk almond flour, coconut flour, baking powder, salt, and garlic powder.
  • Add the dry mixture into the blender with the wet ingredients and blend for a few seconds until just combined.
  • Gently fold in psyllium husks and chia seeds using a spatula.
  • Allow the batter to rest for 10 minutes.
  • Pour the batter into the prepared pan and smooth out the top. Bake for 45 minutes.
  • Let the bread cool in the pan for at least an hour before transferring to a cutting board.

Notes

Serve with cream cheese or butter for an extra treat.
