Ingredients
  

For the Chicken

  • 2 pieces Boneless Skinless Chicken Breasts Thighs can be used for extra juiciness.
  • 2-3 cloves Garlic, minced Garlic powder works if you're short on fresh.
  • 2 tablespoons Balsamic Vinegar Use sparingly to keep it keto-friendly.
  • 2 tablespoons Olive Oil Avocado oil is a great substitute.
  • 1 tablespoon Italian Seasoning Consider making your own if you don’t have any on hand.
  • 1/2 teaspoon Salt Adjust according to your taste.
  • 1/4 teaspoon Pepper Adjust according to your taste.

For the Topping

  • 4 slices Fresh Mozzarella Feel free to swap with another melty cheese if desired.
  • 1 cup Plum or Grape Tomatoes, halved Any bite-sized variety will do.
  • 2 pieces Avocados, diced Make sure they’re ripe for the best taste!
  • 1/4 cup Fresh Basil, chopped Parsley can be used as a substitute if needed.
  • 1/2 pieces Lemon, juice Other citrus juices can work in a pinch.
  • to taste Dash of Salt and Pepper Always season to your liking.

Cooking Steps

  • In a mixing bowl, combine the boneless skinless chicken breasts with minced garlic, balsamic vinegar, olive oil, Italian seasoning, salt, and pepper. Blend well to coat the chicken evenly. Cover and refrigerate for 30 minutes to 24 hours for maximum flavor absorption.
  • In another bowl, mix diced avocados, halved tomatoes, fresh basil, olive oil, lemon juice, and a dash of salt and pepper. Gently fold the ingredients together and cover to keep fresh. Set aside while you cook the chicken.
  • Preheat a skillet or grill pan to medium-high heat. Grill the marinated chicken for 8-10 minutes on each side, or until the internal temperature reaches 165°F (75°C). Look for a nice golden color and juicy texture.
  • Once the chicken is fully cooked, place slices of fresh mozzarella on top to melt just slightly. Serve hot with the vibrant avocado tomato salsa piled on the side or on top of the chicken.

Notes

Optional: Consider adding a sprinkle of crushed red pepper flakes for a hint of spice. Leftovers can be stored in the refrigerator for up to 3 days.
