Ingredients
  

For the Kebab

  • 2 tablespoons Rapeseed Oil Cooking fat that helps achieve a nice crust; olive oil can be used for added flavor.
  • 400 grams Lean Lamb Mince The heart of this recipe; can substitute with chicken or beef.
  • 2 cloves Garlic Crushed; essential for flavor enhancement.
  • 1 teaspoon Ground Cumin Infuses a warm and earthy note.
  • 1 teaspoon Ground Coriander Balances flavors with a subtle citrus hint.
  • 0.5 teaspoon Onion Powder Adds slight sweetness; can skip if using fresh onions.
  • 0.5 teaspoon Smoked Paprika Brings a delightful smoky essence.
  • 0.5 teaspoon Sea Salt Essential for seasoning; adjust to taste.
  • 0.5 teaspoon Freshly Ground Black Pepper Adds mild heat and depth.

For the Wraps & Toppings

  • 4 pieces Brown Pittas Serves as the vessel; whole wheat is healthier.
  • 0.25 piece Iceberg Lettuce Finely shredded; swap for any crisp lettuce.
  • 0.5 piece Red Cabbage Cored and finely shredded; adds color.
  • 1 piece Red Onion Thinly sliced; offers a sharp contrast.
  • 1 piece Red Pepper Sliced; brings sweetness and crunch.
  • 2 tablespoons Chilli Sauce Adjust amount to taste.
  • 4 tablespoons Low-fat Plain Yoghurt Non-dairy option available.
  • 2 tablespoons Pickled Chillies Optional for tangy flavor.

Main Instructions

  • Preheat the oven to 200°C (180°C Fan/Gas 6). Grease a 1kg (2lb) loaf tin with rapeseed oil.
  • Mix together the lean lamb mince, crushed garlic, ground cumin, ground coriander, onion powder, smoked paprika, sea salt, and freshly ground black pepper in a large bowl.
  • Press the lamb mixture firmly into the prepared loaf tin and bake for 20 minutes, or until cooked through.
  • Cool the kebab in the tin for a few minutes to make slicing easier.
  • Warm the brown pittas in the oven for 5 minutes until soft.
  • Turn out the kebab from the tin onto a cutting board and slice it into thin strips.
  • Stuff each warm pitta with the sliced kebab meat and toppings, drizzling with chili sauce and adding yoghurt.

Notes

Optional: Serve with fresh herbs for extra flavor. Store leftovers in an airtight container for up to 2 days.
