How to Make Easter Pie

  • Mix the active dry yeast with warm water and let it activate for about 5 minutes until frothy. In a separate bowl, combine flour, lard, salt, and black pepper, then add the yeast mixture. Knead until the dough is smooth and elastic, around 10-15 minutes.
  • Place the dough in a lightly greased bowl, cover it with a cloth, and let it rise in a warm spot for approximately 2 hours, or until it has doubled in size.
  • Dice or crumble all the meats and cheeses, then brown the sausage in a skillet and let it cool. In a large mixing bowl, combine ricotta, diced mozzarella, black pepper, and gradually mix in the eggs.
  • Carefully fold all the prepared meats and cheeses into the ricotta mixture, ensuring every ingredient is well incorporated.
  • Preheat your oven to 375°F (190°C). Roll out one piece of dough on a floured surface and line a greased 9-inch springform pan with it. Layer the capicola at the bottom, then fill it with the ricotta and meat mixture. Roll out the second piece of dough to cover the pie, sealing the edges and cutting slits on top for steam to escape.
  • Optionally, brush the top crust with a beaten egg for a beautiful golden finish.
  • Place your assembled pie in the preheated oven and bake for about 1.5 hours, or until the crust is golden brown. Once baked, cool completely and refrigerate for at least 2 hours (or overnight).
