Main Directions

  • Start by dicing the onion and bell pepper, mincing the garlic, and zesting the limes.
  • In a large pot, heat 2 tablespoons of olive oil over medium heat.
  • Add the diced onion and bell pepper to the pot. Sauté for about 5-10 minutes until softened.
  • Stir in the minced garlic and let it cook for 30 seconds.
  • Sprinkle in the cumin, paprika, cayenne, black pepper, salt, and chipotle powder. Sauté for about 1 minute.
  • Pour in 4 cups of chicken stock, bringing the mixture to a boil. Once boiling, reduce the heat and let it simmer for 2-3 minutes.
  • Add the black beans (with liquid), corn, cooked ground turkey, and lime zest. Allow it to simmer for 5 minutes.
  • Remove from heat, then stir in the lime juice and cilantro.
