How to Make Potato Soup

  • Cook the bacon in a large soup pot over medium heat until crisp, about 5-7 minutes. Remove bacon and set aside, leaving drippings for flavor.
  • In the same pot, sauté diced onions, carrots, and celery in remaining bacon grease until softened, about 3-5 minutes.
  • Add diced russet potatoes, sauté briefly for 2-3 minutes, and season with kosher salt, black pepper, and Cajun spice mix.
  • Pour in low-sodium broth, bring to a boil, then reduce heat and let simmer until potatoes are tender, about 10 minutes.
  • Mix flour with milk in a separate bowl until smooth, then stir into the simmering soup and cook for another 5 minutes.
  • For a smoother texture, blend a portion of the soup, then return it to the pot and stir in the heavy cream.
  • Taste and adjust seasonings. Add minced parsley and any additional garnishes before serving.
