  • 3 lbs Corned Beef Brisket Opt for a point cut for tenderness.
  • 1 pack Spice Pack Or use a homemade mix of seasonings.

For the Veggies

  • 1 lbs Baby Potatoes No peeling required, just wash.
  • 1 lbs Baby Carrots Substitute with regular carrots if desired.
  • 1 Yellow Onion Chop into large pieces.
  • 1 Cabbage Cut into wedges.

For Cooking Liquid

  • 4 cups Chicken Stock Use vegetable stock for vegetarian option.

How to Make Crock Pot Corned Beef

  • Layer the baby carrots and baby potatoes at the bottom of your slow cooker.
  • Place the chopped yellow onion and cabbage wedges around the edges of the cooker.
  • Lay the corned beef brisket on top of the vegetables. Sprinkle the spice pack or homemade blend over the beef, and pour the chicken stock around.
  • Cover the slow cooker and set it to low for about 8-9 hours until fork-tender.
  • Remove the brisket, let it rest for a few minutes, then slice against the grain and serve with vegetables.
