How to Make Strawberry Banana Bread

  • Preheat your oven to 375°F (190°C). Place halved strawberries on a baking sheet and roast them for about 15-20 minutes until they're soft and their juices have concentrated. Reserve the juices for later.
  • In a large bowl, whisk together all-purpose flour, whole wheat pastry flour, baking soda, and salt until evenly combined.
  • In a separate mixing bowl, mash the ripe bananas thoroughly. Mix in the Greek yogurt, roasted strawberry juices, vanilla extract, coconut oil, honey, and brown sugar until smooth.
  • Add the room temperature eggs to the wet mixture. Stir gently until just combined.
  • Gradually fold the dry ingredients into the wet mixture with a spatula. Stop as soon as the flour disappears.
  • Transfer your lovely batter into a greased loaf pan. Top with any leftover roasted strawberries. Bake for 50-60 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  • Once baked, let the bread cool in the pan for about 10 minutes before transferring it to a wire rack. Allow it to cool completely for the best texture before slicing.
