For the Base

  • 2 cups Cottage Cheese whole milk or low-fat
  • 4 large Eggs whisk until fluffy
  • 1/2 cup Maple Syrup pure for best flavor
  • 1 teaspoon Vanilla Extract
  • 1 cup Oat Flour or regular flour with adjustments
  • 1 tablespoon Baking Powder

For the Flavor

  • 1 teaspoon Cinnamon optional
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Nutmeg use sparingly

For the Topping

  • 1 cup Blueberries fresh or frozen

Instructions

  • Preheat the oven to 350°F and grease a 9x13 inch baking dish.
  • In a mixing bowl, combine cottage cheese, eggs, maple syrup, vanilla extract, oat flour, baking powder, cinnamon, salt, and nutmeg. Blend until smooth.
  • Pour the mixture into the prepared baking dish, spreading it evenly.
  • Gently fold in 3/4 cup of blueberries into the batter and reserve 1/4 cup for the topping.
  • Scatter the reserved blueberries over the top.
  • Bake for 35-40 minutes until golden brown and a toothpick comes out with a few moist crumbs.
  • Cool for 5-10 minutes before cutting into squares.

Notes

Serve warm with Greek yogurt or a drizzle of maple syrup.
