How to Make Sweet Boba Matcha Latte

  • Bring 4 cups of water to a rolling boil. Add tapioca pearls and reduce heat to a simmer. Cook for 25 minutes, stirring occasionally, then let rest covered for 20 minutes.
  • In a pot, combine brown sugar with water. Simmer on low for 3-4 minutes until thickened.
  • Heat water to 175°F, whisk with matcha powder and a pinch of salt until frothy.
  • In a tall glass, layer brown sugar syrup, cooked tapioca pearls, add ice cubes, pour in milk, then gently pour the whisked matcha on top.

Notes

Store cooked boba in syrup for up to 4 hours; homemade brown sugar syrup can be refrigerated for a week.
