How to Make Hot Cross Buns

  • Scald the milk, oil, and sugar in a saucepan until warm, then set aside to cool slightly.
  • Sprinkle the active dry yeast over the warm mixture, allowing it to bloom for 5-10 minutes.
  • Gradually add the all-purpose flour, stirring until a sticky dough forms. Cover and let it rise for an hour.
  • Mix in the baking powder, baking soda, salt, and a little extra flour until fully combined.
  • Prepare the cinnamon and sugar mixture, then fold it into the dough along with the raisins.
  • Divide the dough into equal portions, shape into balls, and place them on a greased baking sheet.
  • Whisk together the egg white and milk, then brush this mixture over the risen buns.
  • Preheat the oven to 400°F (200°C) and bake for 15-20 minutes, until golden brown.
