Ingredients
  

For the Chicken

  • 1 1/4 lbs boneless chicken breasts Halved for quicker cooking
  • 2-3 tbsp sriracha Can substitute with favorite hot sauce
  • 1/3 cup honey Balances spice
  • 2 tsp minced garlic Enhances flavor
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp cayenne Optional for extra heat
  • 1/4 tsp crushed red pepper Optional for additional spice

For the Vegetables

  • avocado oil Can substitute with olive oil
  • 2 medium zucchini Sliced
  • 1 medium summer squash Sliced
  • 1 1/2 cups shredded carrots

For the Bowl Base

  • 2 cups cooked rice Can substitute with quinoa or salad
  • 1/4 cup plain Greek yogurt For creaminess
  • 1-2 tbsp milk To adjust yogurt dressing thickness
  • 2 tsp Worcestershire sauce For depth of flavor

For Serving

  • 1/2 medium lime Optional for serving
  • avocado For topping

Instructions
 

Cooking Instructions

  • Preheat your oven to 400°F (200°C).
  • Heat avocado oil in a large skillet over medium-high heat. Cook the boneless chicken breasts for about 5 minutes per side until golden brown.
  • Whisk together honey, sriracha, minced garlic, salt, pepper, cayenne, and crushed red pepper in a bowl for your sauce.
  • Remove the chicken from the skillet and set aside. Add zucchini and summer squash to the skillet, cooking for 1-2 minutes until tender.
  • Layer shredded carrots on top of the squash, then return the chicken to the skillet, coating it with the hot honey sauce.
  • Transfer the skillet to the oven and bake for approximately 15 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  • Broil on high for 3-5 minutes to caramelize the chicken sauce.
  • Let the chicken rest for 5 minutes, then cut into cubes and coat with remaining hot honey sauce.
  • Assemble bowls with cooked rice, sautéed vegetables, chicken bits, and drizzle ranch dressing. Finish with avocado slices and lime juice.
