For the Casserole

  • 1 cup Salsa Verde Adds vibrant flavor and moisture; can substitute with homemade.
  • 6 pieces Corn Tortillas Use 5" to 6" tortillas or whole wheat for a healthier option.
  • 1 can Black Beans Ensure drained and rinsed.
  • 2 cups Cheddar Jack Cheese Can substitute with pepper jack for an extra kick.
  • 6 large Large Eggs Use substitutes for a vegan version.
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Freshly Ground Black Pepper

For the Toppings

  • 1 cup Cotija Cheese Feta can be used as a substitute.
  • 1 cup Pico de Gallo Can replace with any fresh salsa.
  • 1 medium Avocado Serve thinly sliced or diced.
  • 1/4 cup Fresh Cilantro Leaves Optional based on taste.
  • 1/2 cup Sour Cream Optional for serving.

How to Make Huevos Rancheros Casserole

  • Preheat oven to 375°F (190°C).
  • Spread half of the salsa verde over the bottom of a greased baking dish.
  • Layer half of the corn tortillas evenly over the salsa.
  • Add half of the black beans and half of the cheddar jack cheese on top of the tortillas.
  • Crack the eggs over the layered ingredients, spacing them evenly. Season with salt and pepper.
  • Top with remaining layers: tortillas, black beans, cheese, and salsa verde.
  • Bake for about 30 minutes, or until eggs are set and cheese is bubbly.
  • Garnish with pico de gallo, sliced avocado, cilantro, and a dollop of sour cream.

Notes

Optional: Add diced jalapeños for extra spice. Prepare ingredients ahead of time for easy assembly.
