Ingredients
  

  • - 1 lb ground turkey
  • - 1 tbsp olive or avocado oil
  • - 3 garlic cloves minced
  • - ½ medium onion diced
  • - 1 bell pepper diced
  • - 1 small zucchini chopped
  • - 1 medium carrot chopped
  • - Salt & pepper
  • - 2 tbsp chili powder
  • - 1 tbsp ground cumin
  • - 1 tsp oregano
  • - 1 can 15 oz tomato sauce
  • - 1 can 15 oz diced tomatoes w/ green chiles
  • - 1 can 15 oz black beans, rinsed
  • - 1 cup frozen corn
  • - 1 can water or broth 15 oz

Instructions
 

  • Set Instant Pot to Sauté. Heat oil, brown turkey, onion, garlic, and veggies for 7–9 mins.
  • Stir in chili powder, cumin, oregano.
  • Add tomato sauce, water/broth, tomatoes, beans, and corn. Mix well.
  • Seal lid. Cook on High Pressure for 8 mins.
  • Natural release for 10–15 mins. Stir and serve.

Notes

- Add diced jalapeño for heat
- Swap turkey with lentils for vegetarian
- Freeze leftovers up to 3 months
