  • 1.5 lbs cabbage Hand-shredded for a delightful texture contrast.
  • 2 tsp Shaoxing wine Dry sherry can be used if unavailable.
  • 1 tbsp soy sauce Opt for low-sodium for a healthier twist.
  • 0.5 tsp sugar Can be omitted or substituted if desired.
  • 1 tbsp water Creates steam to help cook the cabbage evenly.
  • 0.5 tsp Chinese black vinegar Balsamic vinegar can work in a pinch.
  • 2 scallions Cut them into 2-inch lengths for that extra bite.

Cooking Steps

  • Begin by heating a generous splash of oil in a wok over high heat.
  • Add the pork belly to the hot oil and let it sear until caramelized, about 3-4 minutes.
  • Toss in the smashed garlic and dried red chilies, reducing the heat to medium. Stir-fry for about 1 minute.
  • Add the hand-shredded cabbage, Shaoxing wine, soy sauce, sugar, and water. Increase the heat to high and stir.
  • Cover the wok, allowing the cabbage to steam and wilt for 1-2 minutes.
  • Uncover the wok and stir in the Chinese black vinegar, chopped scallions, and a pinch of salt.
  • Plate your stir-fry while it’s piping hot.

Notes

Optional: Garnish with sesame seeds for an extra crunch!
