Ingredients
- 1.5 lbs boneless skinless chicken breasts
- 1 tbsp olive oil
- 1 small yellow onion
diced
- 3 garlic cloves
minced
- 1/2 cup sun-dried tomatoes
chopped
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1/2 cup parmesan cheese
grated
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes
optional
- Salt and pepper to taste
- 1/2 cup fresh basil
chopped
Instructions
Add chicken, oil, onion, garlic, tomatoes, broth, and seasonings to crockpot. Stir.
Cook on low for 6–8 hrs or high for 3–4 hrs.
Remove chicken, shred, and return to pot.
Stir in cream and parmesan. Cook on high uncovered 20–30 mins more.
Stir in basil before serving. Top with more parmesan if desired.
Notes
- Add cream only at the end
- Use thighs for more flavor
- Store up to 4 days or freeze 3 months
