Ingredients
  

  • - 1.5 lbs boneless skinless chicken breasts
  • - 1 tbsp olive oil
  • - 1 small yellow onion diced
  • - 3 garlic cloves minced
  • - 1/2 cup sun-dried tomatoes chopped
  • - 4 cups low-sodium chicken broth
  • - 1 cup heavy cream
  • - 1/2 cup parmesan cheese grated
  • - 1 tsp Italian seasoning
  • - 1/2 tsp red pepper flakes optional
  • - Salt and pepper to taste
  • - 1/2 cup fresh basil chopped

Instructions
 

  • Add chicken, oil, onion, garlic, tomatoes, broth, and seasonings to crockpot. Stir.
  • Cook on low for 6–8 hrs or high for 3–4 hrs.
  • Remove chicken, shred, and return to pot.
  • Stir in cream and parmesan. Cook on high uncovered 20–30 mins more.
  • Stir in basil before serving. Top with more parmesan if desired.

Notes

- Add cream only at the end
- Use thighs for more flavor
- Store up to 4 days or freeze 3 months
