For the Marinade

  • 1/4 cup extra-virgin olive oil
  • 1/4 cup lemon juice fresh
  • 4 cloves garlic minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 tablespoon Dijon mustard
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper freshly ground

For the Chicken

  • 4 pieces bone-in chicken thighs

Directions

  • In a small bowl, whisk together extra-virgin olive oil, fresh lemon juice, minced garlic, dried oregano, thyme, Dijon mustard, kosher salt, and freshly ground black pepper.
  • Place your bone-in chicken thighs into a large mixing bowl. Pour the marinade over the chicken, tossing to ensure all pieces are well coated. Cover and refrigerate for 1-2 hours.
  • Set your oven to 350°F (180°C).
  • Transfer the marinated chicken to a baking dish, pouring any remaining marinade on top. Bake for 40-45 minutes, aiming for an internal temperature of 175°F (80°C).
  • For that extra crispy skin, broil for an additional 2-3 minutes at the end.

Notes

Optional: Garnish with fresh lemon slices and parsley before serving. Store leftover chicken in an airtight container for up to 3 days.
