Preparation Steps

  • Combine all dry ingredients in a stand mixer. In a large bowl, mix high-grade flour, sugar, salt, ground cinnamon, ground ginger, and mixed spice until well blended.
  • Mix warm milk, water, and melted butter separately. Once warmed, combine the liquid ingredients and mix them into your dry mixture.
  • Knead the dough for 5 minutes (or by hand for 10) until well combined.
  • Fold in sultanas evenly through the dough.
  • Shape the dough into a ball, oil the bowl, and cover with cling film. Let it rise in a warm place for about 2 hours or until doubled in size.
  • Punch down the dough to release air, then shape into logs, and divide into 12 evenly sized pieces.
  • Form each piece into smooth buns and arrange them on a lined baking tray.
  • Cover and let proof for 1.5 hours until they expand.
  • Preheat your oven to 180°C (350°F). Prepare a cross mixture using flour, sugar, and water; then carefully pipe the crosses on the buns before baking.
  • Bake for 30-40 minutes until golden brown and glaze with hot sugar syrup.
