For the Dip

  • 1 cup garlic cloves peeled and halved
  • 1/3 cup cold water for blending
  • 1/4 cup lemon juice fresh
  • 1 1/2 tsp Kosher salt for seasoning
  • 3 cups vegetable oil for emulsification

How to Make Lebanese Garlic Dip

  • Start by peeling the garlic cloves and cutting them in half lengthwise to remove the green sprout.
  • Place the halved garlic cloves into the bowl of your food processor, followed by the cold water. Blend until the garlic is finely minced.
  • Pour in half of the lemon juice and the salt, then blend again to infuse the garlic.
  • While the food processor runs, gradually drizzle in 1 cup of vegetable oil over about 3 minutes.
  • After adding the initial cup of oil, pour in the remaining lemon juice and drizzle in the rest of the oil slowly for about 6 minutes.
  • Once the dip is thick and velvety, taste it and adjust the salt if needed.

Notes

Garnish with a drizzle of olive oil and parsley for added flair. Store in an airtight container.
