Preparation Steps

  • Fill a pot with about 1" of water and bring it to a boil.
  • Whisk together the egg yolks and granulated sugar in a mixing bowl that sits comfortably on top of the pot without touching the water.
  • Once the water is boiling, turn off the heat and place the bowl on the pot. Continuously whisk until the mixture turns pale in color, about 5 minutes.
  • Carefully remove the bowl from the pot and add the softened mascarpone cheese. Whisk until smooth and silky.
  • In a separate bowl, combine the whipping cream, matcha powder, and vanilla extract. Whip until medium peaks form.
  • Gently fold the whipped cream into the mascarpone mixture until there are no streaks remaining.
  • In a shallow bowl, whisk together the matcha powder, granulated sugar, and hot water until slightly frothy.
  • Briefly dip a ladyfinger into the matcha soak, arrange in the serving container to form a flat layer, then repeat until you cover the bottom.
  • Spread a generous layer of the mascarpone cream over the ladyfingers.
  • Repeat with another layer of soaked ladyfingers followed by another layer of mascarpone cream.
  • Cover and chill in the fridge for at least 4 hours, or overnight for best results.
  • Before serving, sprinkle the top with additional matcha powder for presentation.
