  • Preheat your oven to 325°F (165°C).
  • Wrap a 9-inch springform pan in foil to prevent leaks. Crush graham crackers and mix them with melted butter and brown sugar. Press the mixture firmly into the bottom of the prepared pan and bake for about 10 minutes. Let it cool completely.
  • In one bowl, whisk together the dry ingredients: flour, cocoa, sugar, baking soda, and vinegar. In another bowl, combine the wet ingredients: eggs, buttermilk, vegetable oil, food coloring, and vanilla. Gently mix the dry ingredients into the wet until just combined, then spread evenly over the cooled crust.
  • Beat the cream cheese until smooth and creamy. Gradually add granulated sugar, mixing until well combined. Add eggs one at a time, mixing well after each addition, then fold in sour cream and vanilla extract. Pour this luscious mixture over the red velvet layer.
  • Place your springform pan in a large roasting pan. Add hot water to the roasting pan until it reaches halfway up the sides of the cheesecake pan. Bake for about 55-65 minutes, or until the center jiggles slightly but isn’t liquid.
  • Once baked, turn off the oven, crack the door, and let the cheesecake cool in the oven for one hour. This gradual cooling helps prevent cracks. Afterward, refrigerate overnight to let the flavors deepen.
  • Combine sliced fresh strawberries, strawberry preserves, lemon juice, and powdered sugar in a bowl. Stir gently and spoon this vibrant topping over the chilled cheesecake just before serving.
