How to Make Smooth White Chocolate Truffles

  • Melt white chocolate chips and chopped white chocolate in a microwave-safe bowl, heating in 30-second intervals while stirring until smooth. Stir in the room temperature heavy cream and pure vanilla until well combined.
  • Cover the bowl with plastic wrap and refrigerate the ganache for 2-3 hours, allowing it to firm up but remain scoopable for shaping.
  • Line a baking sheet with parchment paper. Use a cookie scoop to portion the ganache into 1-inch balls, placing them evenly spaced on the lined baking sheet.
  • In a clean bowl, melt additional chopped white chocolate in the microwave using 20-30 second intervals, stirring until smooth. Allow to cool slightly to between 85-90°F for easy dipping.
  • Dip each ganache ball into the melted chocolate, ensuring complete coverage while tapping off the excess. Sprinkle your chosen toppings immediately while the coating is still wet.
  • Place the coated truffles at room temperature on the baking sheet. Allow them to sit for 30-45 minutes until the chocolate is set and firm.
  • For additional flair, drizzle melted chocolate over the top of the truffles and let it set. Dust lightly with powdered sugar before serving to enhance visual appeal.
