  • 4 large white potatoes peeled and cubed
  • 3 hard boiled eggs
  • 4 cups vegetable broth for cooking potatoes

For the Dressing

  • 3/4 cup mayonnaise foundation for creaminess
  • 2 tablespoons yellow mustard for tanginess
  • 1/2 cup sweet relish adds sweetness and crunch
  • 1/2 cup white onions finely chopped
  • 1/2 teaspoon garlic powder for flavor
  • 1/2 teaspoon paprika adds smoky warmth
  • salt to taste
  • ground black pepper to taste

For Garnish

Preparation Steps

  • Wash, peel, and cube the potatoes. Place them in a bowl of cool water to prevent browning.
  • Combine cubed potatoes and vegetable broth in a pot. Bring to a boil, then simmer until tender, about 15 to 20 minutes.
  • Drain the potatoes and let cool for 20 to 25 minutes. Alternatively, chill in the fridge.
  • Boil and peel the eggs, then dice them into a large bowl.
  • In a small bowl, mix mayonnaise, mustard, relish, onions, garlic powder, paprika, salt, and pepper. Chill in the fridge.
  • Fold the cooled potatoes and diced eggs together, then mix in the dressing until combined. Adjust seasonings if needed.
  • Transfer the salad to a serving dish. Garnish with paprika and chives. Serve immediately or chill until ready.
